A Momentous Day
Today is momentous for Dreaming Dog Brewery. We received notification that the Feds (TTB) have approved our application to qualify as a brewery. It’s a first step, but a big one. The next big hurdles are to finish our Cal ABC filings, and construction, and furnishings, and getting first batches of beer into fermentors, etc., […]
Initial Beer Line-up
Speaking of our opening in May, we have been working on our initial brews for the opening. We’re proposing the following as our initial beer offerings: Xoloitzcuintli (Xolo) Lager, a Mexican-Style Vienna Lager SRM: 3 IBU: 13 ABV: 4.4% English Black Lab Porter, an English-Style Dark Porter SRM: 35 IBU: 30 ABV: 6.0% Smooth Collie […]
Planning for Construction Continues
We continue to work on our construction plans. Finalizing the electrical design, which is complicated by the 200A/208VAC/3Phase requirements for our brewhouse. We’ve doubled-down on the engineering design work with the intent of having a permitting set of drawings ready to go by end of February. That likely means our opening date is pushed out […]
Brew house and construction
We have received our brew house equipment and placed into storage. We continue to negotiate and finalize our construction plans. Should be submitting permits this next week.
Education, Compliance and Construction
It is my firm belief you can never know too much. To that end, I attend a one-week brewing class at UC Davis, Intensive Brewing Science. Met a number of people from all over the world through this class. Gain some new insights on the handling of yeast. It’s always a pleasure to interact with […]
Architect and Contractors
Met with our architect today to review construction bids. Some of the bids were just outrageous. We are seeking some addition bids for specific work to see if we can’t reign-in some of the costs. It’s going to force us to delay a bit longer on build-out, but we have to watch our available capital. […]
Getting Ready for Permit Submissions
Getting final documentation together for our permit submission with the City of Elk Grove. Hopefully this starts moving quicker as we have equipment getting ready to ship and only storage for keeping that can accommodate these items.
Been getting busy. Meeting with construction teams these past few days. We should be getting bids for the build by the end of the month. Then, submitting for permits and starting construction on our brewery. Timing is going to be the big problem. We will probably be working on the building until April or even […]
Reviewing Construction Bids
Tomorrow, Dec 12, I’m meeting with our architect to review construction bids. We need to start the build-out of this property and get ready to brew beer!
Progress is painful
We are continuing to work with our architect to plan the build-out of Dreaming Dog Brewery. It is a very frustrating process, but nothing of value comes easy (I suppose). We have designs for electrical, plumbing, heating and air conditioning. We’ve reviewed wall placements and ceiling designs. There is so much detail, but we recognize […]
